MDM is abbreviated as Mechanically Deboned Mear, which means the meat that comes as a result of sieving the chicken under high pressure using the mechanical deboning device. In this procedure, the chicken bones get separated from the tissues of the meat. This method is practiced so as to get the remaining chicken carcass after the removal of primal chicken cuts. MDM can also be called as MSM, which means Mechanically Separated Meat. MDM processed chicken gives you a paste-like consistency of the meat and the procedure can be done for the species including pork, turkey, ground beef, chicken, and mutton.
The paste that is extracted from the MDM is used to manufacture processed meat. The process of obtaining chicken MDM entails the grinding or pureeing the carcass left from the chicken after the manual removal of the chicken meat from the bones. Then the slurry is passed through a sieve with a lot of pressure. The puree includes the chicken’s bone marrow, bone, skin, blood vessels, and the remaining scraps of meat from the bone. The resulting product from mixing the different remaining parts of the chicken is a mix of chicken muscle tissue.
Despite using the remaining chicken tissue, chicken necks are also useful. After following the standard procedure for obtaining chicken MDM, we proceed to the preservation stage. Here we store the chicken MDM in a plate freezer to help in its preservation. Freezing the chicken MDM also helps give it a block-like shape. We sell the frozen chicken MDM in quantities of 10kg to 25 kg in the form of blocks.
The frozen chicken MDM is the perfect protein source for a majority of people. It is also useful in the production of items like sausages, hot dogs, and other meat processed products.
